Ingredients

Banana Bread Ingredients

  • 3-4 very ripe bananas about 1½ cups mashed
  • 1/3 cup butter melted (or neutral oil)
  • 1 tsp baking soda
  • 1 pinch salt
  • 3/4 cup granulated sugar or ⅔ cup for less sweetness
  • 1 large egg beaten
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour

Optional Add-ins

  • 1/2 cup chopped nuts walnuts or pecans
  • 1/2 cup chocolate chips
  • 1/2 cup dried fruit

Instructions

  • Preheat your oven to 350°F (175°C). Butter or line a 4x8-inch loaf pan with parchment paper, allowing some overhang for easy removal later.
  • In a large bowl, mash the ripe bananas with a fork until smooth. For a chunkier texture, leave some small pieces intact.
  • Stir the melted butter into the mashed bananas. Mix in the baking soda and salt.
  • Add sugar, beaten egg, and vanilla extract, stirring until well combined.
  • Add the flour, folding gently until just combined. When you still see a few streaks of flour, fold in any optional ingredients like nuts or chocolate chips.
  • Pour the batter into your prepared loaf pan and bake for 55-60 minutes. The bread is done when a toothpick inserted into the center comes out clean, with perhaps a few moist crumbs.
  • Allow to cool in the pan for 10 minutes, then remove to a wire rack to cool for an additional 10-15 minutes before slicing.

Notes

The darker and more fragrant your bananas, the sweeter and more pronounced the banana flavor will be in your bread. Those black-spotted bananas that seem past their prime are actually banana bread gold!
If the top is browning too quickly during baking, tent it with aluminum foil halfway through.
For a healthier version, you can replace all-purpose flour with whole wheat flour, reduce sugar to ½ cup and add ¼ cup unsweetened applesauce, or substitute Greek yogurt for half the butter.
